Cut beef into small one cubic cm cubes.
Use black pepper, Chinese cooking wine (or red wine), and salt to marinate the beef for10 minutes.
If mushrooms have any dirt, brush them off gently instead of washing them. Then, Icut the mushrooms into cubes.
Heat the cooking oil in a frying pan over a medium-high level. Add the ginger slices andthe finely chopped onion.
When the onion turns translucent, quickly fry the beef until the beef changes colour.
Add mushrooms and stir fry for two more minutes. Add oyster sauce and coat the beefand mushrooms evenly. Adjust the taste by adding some sugar.
Enjoy it with a bowl of rice.
