Honey Coriander Lime Shrimps are sweet and savory pan-fried shrimps with fresh lime and coriander. The shrimps have a layer of sauce which is perfect with a bowl of rice. Infused with the freshness of coriander and lime, the shrimps look so festival that I cook it for the family gathering very often. The caramelized bit from the honey has a blackened, smoky look, which provides the lively looking of my photo.

I always have a pack or two frozen shrimps in my fridge. After a busy working day, I can cook a honey coriander lime shrimps dish within one hour and enjoy it with a bowl of plain rice.

Main ingredients

The main ingredients are large shrimps, honey, soy sauce, coriander.

  • Shrimps: I prefer the large peeled and deveined shrimps since it takes less time to prepare and cook.
  • Honey: Use regular honey for this recipe. Do not use honey with a floral aroma since it could ruin the flavour of this recipe.  Honey should not be too much, as otherwise, the sauce would be too sticky and sweet.
  • Soy Sauce: Several types of soy sauce, such as those from Korea, Japan, or China, work for this recipe. The proportion of the honey and soy sauce is key to this recipe, 2:1 is perfect for the recipe. If the soy sauce is too much, the shrimp will taste salty.
  • Coriander: The fresh coriander is a fragrant, antioxidant-rich herb with health benefits. Coriander is quite common in many Asian cuisines. The pleasing floral aroma of the coriander adds a distinct flavour to the dish.
  • Lime Juice: While lemons have a broader profile in both savory and sweet dishes, lime is often an ingredient for savory dishes due to the bitterness. In my recipe, I use lime juice to enhance the flavour.

How to make Honey Coriander Lime Shrimps

  • The first step is to marinate the shrimps for at least 30 minutes. Mix honey, lime juice, and soy sauce, and take half the sauce for the marinade process.
  • Then, heat a non-stick frying pan over medium-high heat. Discard the marinade and dry the shrimp well. Then cook the shrimps. Make sure not to pile shrimps up in the frying pan, as otherwise they would get boiled but not seared.
  • When the shrimps get browned, pour the remaining sauce into the pan. Continue cooking until the sauce gets caramelized.
  • Lastly, I add the freshly chopped coriander. Stir-fry for 30 seconds to integrate the herbal aroma.
  • When serving, transfer the shrimps to a plate and eat warm with a bowl of plain rice.

Tips for the recipe

If coriander is not your choice, the fresh basil leaves are also a good choice.

Ingredients

  • 1/2 kg peeled and deveined shrimps
  • 4 tbsp honey
  • 2 tbsp soy sauce
  • 1 tbsp lime juice
  • 1 bunch fresh coriander, finely chopped

Instructions

  • Combine honey, soy sauce, and lime juice. Divide the mixture in half.
  • Marinate the shrimp in half the sauce for 30 minutes. Discard marinade.
  • Heat the frying pan over medium-high heat and sear shrimps on both sides until browned. 
  • Add the remaining sauce and cook until the sauce gets thicker.
  • Spread the coriander and sauté quickly for about 30 seconds.
  • Transfer to a plate and serve warm with a bowl of plain rice.
