King Oyster Mushroom and Snow Pea Stir-Fry

King oyster mushroom and snow pea stir-fry is a super-healthy, tasty, and nutritious recipe. This quick and easy stir-fry will be on the table within 30 minutes. It uses only two main ingredients. It can be a main dish as well as a side dish. Usually, I enjoy the food with a bowl of rice.

The king oyster mushroom has a meaty texture and umami flavour similar to abalone, making them a favorite vegetarian option. Unlike the usual mushrooms, they don’t shrink so much after cooking. Native to the Mediterranean, King oyster mushrooms are commonly used as grill ingredients because they do not lose shape. They are also popular in Asian cuisines. Especially in Chinese cuisine, the king oyster mushroom has become a quintessential ingredient.

Snow pea is available year-round. The peak season for snow peas is spring throughout the summer months. Higher in vitamin C than other types of peas, the crisp and crunchy snow peas add colour and texture to this recipe.

What are the main ingredients

There are only two ingredients used in this recipe, the snow pea, and king oyster mushroom.

Snow peas

Choose snow peas that have fresh and bright green tops. They should be flat and have tiny seeds. Good snow peas should snap when broken in half. Do not use snow peas with wilted, discoloured, or shriveled parts.

King oyster mushrooms

When buying king oyster mushrooms, I choose mushrooms with firm, flawless stems. They usually come nicely trimmed and free from dirt or soil. The king oyster mushroom’s natural umami flavour is unleashed once cooked, and therefore their size does not matter.

How to make King oyster mushroom and Snow Pea Stir-Fry

Cook the recipe in three steps, preparation, blanch snow peas, and stir-fry mushrooms and snow peas.

Preparation

If mushrooms have any dirt, I brush them off gently instead of washing them. Then, I cut the mushrooms into thin slices, about half the size of the snow pea. This shape ensures the mushrooms cook more evenly and get seasoned thoroughly.

Use a sharp knife to trim the ends of snow peas and remove the thin string from both sides of the snow pea. After this process, the snow peas taste more tender after cooking. Then, cut the snow peas in half.

Blanch snow peas

Fill a medium saucepan with water. Bring the water to a boil over high heat. Add the snow peas and boil the snow pea for 30 seconds. Don’t overcook them, or they will lose their crunch. Immediately drain the peas in a colander and place them in the cold water. This step is necessary since the snow peas will have a vibrant green and a crisp-tender texture.

Stir-fry mushrooms and snow peas

Add two tablespoons of cooking oil in a pan over high heat. Stir fry mushrooms and snow peas for about two minutes. Do not over cook the mushrooms and snow peas. The snow peas should still be crunchy. Season the food with salt and pepper.  I eat the dish with a bowl of plain rice.

Tips for the recipe

Sometimes I skip the blanch step. Therefore, I would cook the snow beans first but only for a short while, then add the king oyster mushrooms and stir fry both ingredients until done.

Ingredients

  • 6 king oyster mushrooms
  • 200 g snow peas
  • 1 tsp Kosher salt
  • black pepper freshly ground

Instructions
